Lavender has a very complex taste and perfume that has elements of sweetness, herbal tones and spice notes. Lavender is a captivating and intoxicating herb that is not for the bath only, but it also belongs in the kitchen. Therefore. Think of how to balance and compliment the lavender in each dish.
Lavender harmonizes naturally with meats, fish, sweets and fruits. Lavender is in the mint family, so recipes that use mint or rosemary can also use lavender in place of or in addition to the other herbs. It plays well against red and black fruits such as blueberries, currants, and plums. Lavender is especially yummy with citrus.
